I have long loved dandelion root tea, as well as the bitter greens (but not too much!) in my salads. People think they have to buy them in the stores, but as long as the ones you find in fields have not been sprayed with weed killer, they are just fine to use. You can roast the roots in a low heat oven and get the same effects. It’s a great substitution for coffee too (that’s what the old pioneers would use when they were out of coffee).
